I was caught speeding on the weekend and went to produce my documents at the local police station tonight. I found out my MOT actually runs out today but was obviously valid the day the incident occured.

My question is will this be ok with the Police. The problem I have is that if it isnt the car currently is decatted so getting a new MOT will take a while.

Any advice greatfully appreciated.

You have to produce a MOT for the date of the stop (on the producer). Whether it's covered today or tomorrow only becomes an issue if you are requested to produce one for today or tomorrow.
