Is it possible to obtain a VASCAR video after going to court for speeding and pleading guilty and being convicted?

Why not? Can't you make an application under DPA? (I wouldn't expect it to be free, obviously.)

Considering that most people never get to see the video evidence against them even when they plead not guilty, you are hopeful!

What are the chances that you will find that the tape has been reused/deleted/lost after your case?

The DPA wouldnt help, I think you are on about the Freedom of Information Act, however I am still not sure in practicality that it will help due to the reasons above.

Exclusions under both Acts can be, and likely would be, applied - Streaky

What if you wanted to consider an appeal? Could you not ask for all the evidence?

Would the video not even count as evidence if it wasn't shown in court?
Would it even be possible to consider an appeal if a guilty plea were originally submitted?

If the video formed the evidence then I would say it would be retained until 21 days after the case had been disposed of to cater for any appeal that may be made.

Person pleading not guilty can appeal on the grounds of conviction and sentence.

Person pleading Guilty can appeal on the grounds of sentence.

One would need to consult Solicitor/Clerk to Mags Crt/CPS to query release of tape.
