Looking for advice for cameras for in-car video with this sort of quality and views https://www.youtube.com/watch?v=CvdEdXndwrY/
If possible would also be able to display a map and g-force.

It's just a twin camera dashcam set up. You can spend money to get the g force rating and stuff or you can just record inside and outside. Blackvue stuff would do it with the software they load on, if the G force and shock numbers arent that important, a pair of anything from the Dashcam thread would do you
Eta - word of warning, that video is nicely lit with decent daylight. Do some research on what happens in low light and make a call on it from there. Some of the cheaper ones just give you a few Gb of grainy dark mess
