Only 2 fish restaurants I really know of in Edinburgh are the Mussel inn on rose street and the Loch Fyne restaurant down by the shore in Leith

The only tapas bar I know of is one that a few PHers frequent is La Sal on the Southside

Italian food in Edinburgh is everywhere. every second restaurant in Edinburgh seems to be an Italian or do Italian food.

Get yourself down to the Shore in Leith. Fishers is very good, The Shore itself absolutely superb. Teuchtar's Quay round the back of the Shore is also pretty decent.
If you like your seafood or decent quality bistro food, then The Shore is definitely one of the best in the city. There's a whole load of other places down there too - Italians, decent curry house (Raj), pub food.

Okay, just got back from Edinburgh and thought I'd say thank you for the recommendations guys. As usual PHers could be relied upon to point me in the right direction.
We ate at:
Fishers Edinburgh - pricey but very good.
Scran and Scallie - excellent food in a pub setting.
Fishers in Leith - lunch this time, good again.
Last night was the Mussell Inn in Edinburgh and it was superb as well as cheap. Probably some of the best seafood I've ever had.
Also worth a mention is Caffe Centro, for excellent Italian coffee and cannolo.
