Edinburgh Centre Restaurant

My daughter and her husband are having a break in Edinburgh in a couple of months for his 40th birthday. We’d like to pay for them a meal as a surprise. Any recommendations for a small, classy restaurant? They’re big foodies and like small, unusual places, any type of food except Chinese.
If you want foodie food in special places then a few that come to mind immediately:
- Browns of Leith (More casual, but HOT right now)
- Timberyard
- Cardinal
- Skua
- Ardfern
- Heron
- Avery
- La Potiniere
- Cafe St Honore
Like I say, just a few to choose from. Edinburgh is such a haven for foodies!

so the head chef who helped get the timberyard their michelin star, has started his own restaurant in leith called- Dogstar. supposed to be very good, however not had a chance to visit yet
another couple of suggestions:
the table- might be hard to get a space, but it’s a tasting menu, only 10 covers per night. you sit at a breakfast bar area and watch the chefs cook/ prep/ plate up and can chat away to them. hands down the best food i’ve eaten
under the table- is their normal/ à la carte restaurant downstairs, similar high quality food
