Ford focus mk1 fan kicking in while driving

a bit stuck to know what to do. The car is not over heating. The temperature gauge stays in the middle and does not increase and no coolant loss. Why I am a bit worried is that the radiator fan comes on while I’m driving motorway.
I don’t think it does it in the mornings, just in the afternoon weird I know. I did the dash trick to see the engine temp and it peaked at 107c never increased past that. The heater works ok and it had a new water pump in 2019. Could the thermostat be faulty or the engine temp be faulty?

Most likely to be fan switch. Would imagine a cheap, and simple fix. I'd just change it. If temperature is stable unlikely to be thermostat as will either overheat (if closed) or just take longer to get to temperature (if permanently open) Fan switch directly responsible for feeding power to fans and if eratic in it's operation would cause this. Only other thing to check would be air in the cooling system that may cause hot spots, but unlikely
