I'm trying to locate the magazine our Interceptor was advertised for sale in way back in February 2004.

I've tried the two obvious ones Practical Classics and Classic & Sports Car, but have had no luck with them.

Can anyone recommend any classic car mags I may be forgetting which were around back in 2004?

(unlikely)

Motoring News
(unlikely again, but I used to advertise cars in it many moons ago...)

Auto Trader known as Thames Valley Trader -
was still going as a 'physical' weekly mag until 2013 (bought and sold sev cars via it back in the day)

What Car? (unlikely)

Car Mechanics
(was still going in 2019 to my knowledge, but again unlikely)

That's about the lot I think, apart from ones you'd never advertise a classic in.

There have always beeh short lived magazines too, so your task might be impossible.

Was it advertised by a dealer, or private? That might be yoir best approach.

February 2004, is that definitely the issue date ?

Most magazines on the shelf are one month ahead, date wise.

you could also try 'Motorsport magazine' from that era

And don't forget Classic & Sports Car and Classic Cars are separate magazines.
