I have a classic car policy with Lancaster, they tell me I’m not covered for this type of event.
I’m amazed, it’s just a non competitive tour of the countryside. The only timing is to arrive for lunch.
Have you guys experienced this.

What grounds has Lancaster given for not covering them?
My Riley's insurance includes this (below). As there is no competitive element whatsoever in touring assemblies we are covered - we took part in 19 last year and must have done 100s in total.
"This Insurance does not cover use for hiring, racing, pacemaking, speed testing or competitions, performance
testing, the carriage of goods or passengers for hire or reward, or for any purposes in connection with the motor trade."

As you say there are lots of these tours, they are very popular. I only contacted Lancaster just to make sure, as the event I’ve entered made a point about Touring Assembly Cover.
I emailed them asking if I’m covered. All I got was a one liner saying my policy does not cover this type of event.
I’ve replied pointing out they are non competitive, no speed sections etc etc, no difference to me driving to Scotland for a static show. I included the above links.
They have replied again saying they have sent my correspondence to the underighters, will get back to me.

In the last 30 years we've attended so many "Touring Assemblies" I've lost count. Because they're not track days NOR are they races and attendance is optional, not a single car insurer has had any issue with them.
T/A's don't run under MSA/RAC guidance so are fully at-will driving events. If your insurer is being pissy about one, I'd take serious pause at finding another, or grab some specialst cover just for the period and then at renewal drop them.
