Just had my crappy fabric S2 seats recovered in leather by the Lotus Factory Trimshop (through Hangar 111).
Must say I'm gobsmacked at the amazing craftsmanship - absolutely superb.
Anyway, they have very kindly added in the lumbar support thingy - that pump with a blow up bladder.
There are no instructions and although it's obvious how it's pumped up, how do you let the air out...

At the base of the 'pump' there is a simple 'button' which releases the air when pressed in

They were about £250 each including postage to and from the trimshop(I sent them off one at a time so I could keep using the car).
I could have paid a bit less but I went for the business ie lots of padding and the Lotus logo stitched in silver in the headrest.
To give you an idea of cost I got a few quotes from some car coach trimming businesses in South Yorkshire - I was being quoted around £800 for two seats.
The only drawback with the Lotus trimshop is time - takes about 4 weeks for each seat.
I also had the two plastic door panels covered in leather along with the centre console.
I guess its a bit extravagent, but for me it transforms the interior of the car - now looks as good on the inside as it does on the outside.
