Looking for a way to raise money for GHF as well as a challenge and visit to these 2 countries
I did something very similar to raise money for our local air ambulance a few years ago.
It was a great experience, the cycling was pretty easy (the only elevation we did was getting over the little bridges that cross the river) but it was very hot and humid. Most of our riding was on quiet roads/tracks although there were a few slightly hairy bits in the towns and cities.
The route we did (which if I remember rightly looks very similar to that itinerary) took us well out of the main tourist spots and the locals, particularly the kids, were very excited to see westerners and were incredibly welcoming.
And Angor Wat was incredible. Even if you do share the sunrise experience with several thousands of others.

I went in February. Weather was hot and humid but I don't think we actually had any rain.
The heat isn't too bad when you're moving on the bike since you create a nice breeze but it was pretty oppressive when you stop.
I'd definitely recommend doing it - it was a great experience and I made a few new friends who I now cycle with regularly.

I see there are 2 options, Minimum sponsorship or self fund with reduced fund raising, I'm uring to the later, which route did you go for, PM if you prefer, for the former they are looking at £3,100 which I'm unsure if I can guarantee this.

I did some 'event' stuff, like laying on a big three course meal from friends with drinks and then charging them £20 a head. At least that way they got something out of their donation! I also had my legs waxed at a work conference, my wife did a cake sale and I was lucky to have some very generous colleagues who dipped into their pockets.
If I'm honest, I'd go self-funded with reduced fundraising if I did anything like that again. I certainly feel like I exhausted all of the goodwill of friends and family, and then some.
