Good bunch of people, forum lists most of the private club trackdays organised at Knockhill and Crail. There are several of these a month at Knockers, in a more controlled environment than the demolition derby 'hot hatch' days.
East Ayrshire car club own the sprint track at Kames, 800m of tarmac, only 13 feet wide, but it's great fun. I used to go there with a (now defunct) Scottish trackday club, and members manhandled Cerberas and Skylines round this overgrown kart circuit quite successfully!
That's really it for Scotland. There are very occasional 'open' club nights at Forrestburn hillclimb near Shotts on the M8. Alford transport museum in Aberdeenshire has a small sprint circuit that the SIDC sometimes attend. Ingliston is for all intents and purposes closed nowadays.
Airfields are always an option if you can get access. I once ran a tracknight at Glenrothes airfield in Fife when I worked there!
