There is a bit more to this situation, but in the interests of keeping it simple:

If you agreed a 6 month tempoary contract, with the option to extend after 6 months, and after 5 months the employee decided not to continue with this contract, put a months notice in to the employer, thus ending on the original lapse date, could the employer seek to terminate the contract earlier, say giving 1 week notice?

I understand that 1 week would be considered legally adequate, but can they impose this after the employer has offered a months notice out of goodwill?

This would all be within the initially agreed 6 month period.

Whether a position is temp or perm, there's usually a stipulated notice period, either 1 week, 1 month or 3 months. You can always end a fixed term contract early, as long as the notice stipulated in the contract is given by either party.
