Asking on behalf of a mate, I don't really know the ins and outs of employment any more hehe

If you go to an interview, told you are selected and they want you to start, at what point does it become official? Is it best to wait for the offer letter itself?

I don't know the exact letter of the law.

But I will only hand notice in when I've got a signed contract in front of me. Even though they say an email offer is legally binding I still prefer a contract.

That sounds safest to me, I will pass it on!
