I have a couple days of old Corbeau GT seats knocking around in the garage that I'd like to fit. I don't have any subframes though, does anyone know where I can get subframes suitable for fitting to my mk1?

Sparco make MX-5 fitting kits, but Ive only ever seen them with Japanese writing on, so I suspect that theyre Japanese market only.

Have a go at Diying it if you can manage a hacksaw and a drill.
The mx5 seats are quite good because the arrangement of the runners and the captive nuts in the floor is all quite simple.
The easiest way is if you can take the runners of your old sears and mount then under the buckets, then you keep the sliding and the seatbelt mount remains safely attached.

It's worth involving your existing seat just to have a look if your not familiar with it, only 4x 14mm iirc and it pops right out. Flip it over and you can see how the runners are really easily fixed on too.

Yeah old seat is out, may get some steel plate and make up some adapters. Not sure on the required thickness though?

Use angle. Cut through the angle allowing the base the follow the floors contour whilst the upright side remains true (if this makes any sense).

The real problem is getting the seat low enough.
