Fan question

Trying to get some help regarding the wifes Mazda Eunos/MX5

1990 G reg 1.6 manual with aircon.
The car did not over heat on the temp gauge but you could hear the water bubbling up. The RAC chap said it was the rad so I have replaced that...then the fan wouldn't come on so I replaced the fan switch that sits on the thermostat housing and still nothing. I was advised to cross over a few wires in the diagnosis box in the engine bay which I did and the fan worked so something isn't telling it to turn itself on.
any ideas techy mechanic people out there. Thanks

Is your water pump belt still in place? Mine snapped and had the same issues.

Was your AC on at the time? That often results in a bubbling sound from the AC rad - i.e. not the coolant rad...
