Biggest Brownie Points are going to be the Rolex. A steel Datejust should be doable for your budget. If you know the model number it would be worthwhile contacting Dom Hackett or similar who maybe able to source one at or close to budget. If you have to pay full price look at somwhere that does interest free and spread the pain.
If you want diamonds then maybe something from Omega and no one has ever gone wrong with a Cartier. But, neither of them are a Rolex Datejust!

Really depends if she is in to watches, is into specific brands or will be no the wiser whether you buy a Rolex or Tissot.
My X was more happy with a £500 Michael Kors than she would of been with a 5k Rolex, the new missus is the same as well which means I get to buy more watches for myself.

If you're going Rolex DJ then definitely go pre owned. Birth year is a nice way to pitch it!
Cartier a great suggestion, with lots of decent choice.
I'll add the Chanel J12 to the mix. Clearly, this should also be sourced pre owned if possible, but theyre a really decent watch, and very well executed.
