I was playing with an IWC watch today and the owner said not to press the reset pusher if the stop watch was going as it could jam the movement?

Why would that be?

Surely the manufacturer would put a device in that would prevent that?

I've got several vintage chronographs with different movements which leads to pushers doing different things on different watches. I've never had any trouble when I've pushed the wrong button at the wrong time.
