Cook chips - and breaded or battered fish and chicken - hotter and longer than recommended. Experiment until you get it right.

Definitely check the temp, ours was the same and we ended up getting another one as we couldn't regulate the temp correctly.

Wondering if this is the only solution.

You might like to consider an air fryer. I was dubious, bought one, love the thing.

Gas ovens are a more humid environment than electric ovens. This makes electric better for pastry and things you want to crisp.

That's probably no help if you've got gas so you'll just have to experiment to get it right.

as johnny craddock used to say " if you want your
pasties to look like fanny's , put 'em on the oven top shelf ".

he didn't actually say that, but a good fanny joke will never devalue on PH.

Buy an oven thermometer, in my experience, all of the ovens I have had never heat to what they say. Currently have a Neff, if you go by the dial you will never cook anything properly.
