This is with christmas in mind, but i also love cooking a late sunday roast for friends. I'm pretty comfortable with the obvious meats, and have a couple of nice go to vegetarian alternatives for the non meat eaters. spuds and parsnips are something I have to a decent standard, but i fall down at the veg, usually opting to steam whatever has come from the garden typically kale and cabbage, often do the same with carrots and broccoli or cauliflower too.
so, ideally without meat, what is your default side that adds an extra bit of oompf to your sunday roast?

In true PH tradition i’ll read what you wrote but offer something you hadn’t asked for.

Christmas for me will have a side of brussels.

Tesco sliced beans for me, always a bit different to the standard offering of peas.

Cauliflower and Broccoli bake , in a cheese sauce with hickory sticks and grated cheese on top .

thanks both. we will probably have sprouts, i love them, but only ever really eat them at christmas.
i suppose cauli cheese is a classic go to, i'm still on the fence with cheese sauce and gravy smile getting better, but still a bit suspicious!

Slow braised red cabbage in port

Agree with you on that, but my kids love cauli cheese!

Bread sauce, onion sauce, apple sauce, mint sauce, even salsa Verde all depending on the main event.

Yorkshires, obvs.

Not done it myself but a friend does sprout tart!

ETA stuffing! Doesn't have to be meat based.

Peas and leeks.

Fry chopped leeks in butter, add frozen peas and a little gravy or veg stock and cook until peas are just done. Serve without draining.

Roasted sprouts are top notch - far better than simply boiled.

Cauli cheese is a necessity. Use parmesan as well as cheddar in the sauce.

Red cabbage and apple. Must have.

Tom Kerridge carrots. Must have.

Roast parsnips - honey on late in the roasting.

Roast and mashed spuds (mash more for the kids).

Peas (because I like them smile). Often mix them with butter pan fried leeks.

Carrot and swede mash.

Bread sauce. Must have,

Stuffing. Must have.

Yorkshire puddings. Must have (but Aunt Bessie has no place at our dining table).

Cranberry sauce.

Lashings of gravy.

Parsnips in orange juice , part boiled to absorb then in with the roast to caramelize .
