So, we have a family recipe that seems to please most people,except the veggies. It’s been done for as long as I can remember and is great in the warmer weather with other salad stuff and maybe cold cuts of home roasted ham etc. Ours is new pots or jerseys,finely chopped onion,finely chopped dill pickles and pastrami. Add a bit of mayo to bind it all together and that’s it.Perfect.
What are your tips or preferences or killer recipes?

I use sour cream and a mix of dill and chives for the dressing.

Mint if it's Satan's nut sack hot out.

Pastrami in potato salad? I have a feeling that may not actually be legal.

New potatoes. Chives. Parsley. Mint. Spring onions.

Mustard, balsamic vinegar and olive oil dressing.

It's a winner, trust me.

Small waxy potatoes, finely sliced red onion.

Steam the potatoes then add them to the onion immediately they're cooked, squeeze over 1/2 lemon, some olive oil and salt. Stir carefully, cover and leave to cool. Stir a couple of times during cooling.

When cool, drain off any liquid. Dress with a mix of mayo and 10% greek yoghurt, chopped parsley and more salt and lemon to taste.

Salad potatoes, chives, mayo, salt and pepper. I like to keep it simple as usually do a roasted pepper salad and other accoutrements.

I've done it this way for years and family all love it:

Baby potatoes, waxy if possible - boil (skin-on), cool and cut into chunks
Mix in a bowl with equal portions of mayo & salad cream, spoonful of dijon mustard (as much as needed to your liking), some cracked black salt and pepper, teaspoon of garlic powder and a squeeze of lemon juice. Sprinkle with chives.

I'd personally like to add finely chopped pickles too but no-one in my family eats them so I leave them out.

Some great suggestions in there people.I think we might try and add some dill one day, I think it will add to the combo we currently do. The only suggestion that was a standout no, was the garlic. A neighbour did some home made pot salad,that we tried, and although the basics were there and lovely, it had garlic in, which( for us) really didn’t work.

On the rare occasions I make potato salad I make either of these but with loads more chilli

I prefer a little more crunch, I normally par-boil my new/jersey potatoes, bung them in a hot oven with a drizzle of oil for 30-40. Half crush and toss them half way through so they get nice and crispy.

For me it's mayo, little bit of red and spring onion, salt & pepper

Potato salad is one of my favourites.

You're right of course with Jerseys if they're in season. but I'm happy with standard new pots

The difference maker for me is get a lemon cut in half then give it 5 minutes on a griddle pan then use the juice of that to make your own mayo. Sounds like a lot of faff but it really is worth it.

Thankfully nobody has said add chopped hard boiled egg into it …. vomit very American thing to do I believe.

The recipes I have linked use eggs but I have never used them when I make it because I dont like the egg mayo potato salad clash

Try cooking the potatoes in chicken stock and then leave them to soak in the stock for a bit, adds another dimension.

Not a fan of gloopy potato salad myself, so when I do one it's waxy small pots, cooked so they are still slightly firm, dressed with a simple vinaigrette (or melted butter and lemon juice), salt and pepper and tossed with a few chives or some dill.

This is the way.

Vinegar is vital (I would stirr a white vinegar through). Finely chopped red onions for texture.

Literally handfuls of fresh herbs.

I would just add plentiful seasoning.
