Biotiful kefir yoghurt
Discussion
Like all dairy you'll know when it's on the turn or off. It will separate a bit but just give it a good stir then smell/taste it. I've found that ten days after the use by date is fine in the fridge.
Now as it happens I only ever buy a small tub Kefir (or Greek yoghurt) to make my own. Earlier today I just jarred up 2 litres of Peach yoghurt I started last night................

First two jars for my neighbour............

It's so easy especially if you have a bread machine. Just need 2 to 3 x tablespoons of your shop bought Kefir as the 'starter culture' and 2 litres of whole milk. I usually use raw unhomogenised from my local farm dairy but any will work as long as it's not UHT. Heat the two together to 43 C and maintain that temperature as best you can for 8 hours - much easier in a bread machine and most have a yoghurt setting dor this. Then let it cool and spoon off the yoghurt and done.
Check Youtube for ways to make it thicker etc.
