Christmas Eve Cooking

We are staying at the In-laws on Christmas eve and i have nominated to cook as they are doing Christmas dinner. There will be 6 of us eating and im thinking of things to do. There cooking setup is not that great 4 electric rings and a crappy oven.

Any ideas that are not that complicated

(i do like them so poison is out of the question!)

How about a baked gammon joint along with - braised red cabbage with apples, new potatoes and broad beans. Not too heavy before the big one next day. Braised red cabbage can be prepared the day before.

I'd do something like a big lasagne. Informal food before the big event, and you can prepare all the sauce etc now and just assemble it on Christmas eve.
