Managed to get hold of 2kg of fresh scallops, but even though I love them gently fried in butter and black pepper, you can only have so much of a good thing.
Any other suggestions?

Wrap them in pancetta or smoked streaky bacon, tooth-pick them, fry till crispy and finish in garlic butter. Serve on a bed of rocket with a balsamic reduction dressing.

Pea and broad bean purée, lardons, lemon thyme and lemon zest infused olive oil. Job jobbed.

Wrapped in streaky bacon and fried is fantastic, they work well with black pudding or alternatively chorizo.

2 kilos?!?

I was at a Chinese restaurant many years ago and had them steamed (on a half-shell) with garlic and ginger. Lovely.

if you have lots and lots to use up, i would think about:

- flour, pan fry, then make fish tacos (soft tortilla ones, not Old El Paso) with some chopped chili, onion, coriander, lime juice etc.

- add to thai green curry until just cooked

- sweet and sour stir fry with spring onion & chilli

- pan fry, chop up and add to corn chowder

Once every few months I make a batch of apple & vanilla chutney then, for weeks afterwards I get to enjoy scallop lunches:

Pan-fried scallops on top of grilled black pudding, served with a dollop or two (or quenelles if you have guests) of the chutney. A drizzle of scrumpy reduction finishes it off a treat. All cooked in less than 10 minutes.

Shredded cabbage, Carrots cut into sticks,spring onions, marinade the scallops in veg oil,Soy sauce,ginger and garlic. Awesome stir fry.

If you really want to push the boat out Blumenthal's scallop tartare with white chocolate is very good (it's in his Heston at Home book) or David Everrett Matthias' dish with apple, cauliflower, cumin velouté and ras-el-hanout caramel is delicious, if a bit of ball-ache to create.
