Whenever I cook spaghetti; I can never get it properly dry after cooking, and as a result I'm left with a small pool of water at the bottom of my plate.

Any tips?

Then put back into the hot pan and leave it for a minute or two, allowing the heat to evaporate any excess water.

Thanks, I do the first bit, wasn't sure about putting it back on the heat.

Cheers

Well, I said back in the hot pan, not on the heat. But if you do want to put it on the heat, you need to stir it all the time so it doesn't burn. That should make sure all the water is gone smile

add the pasta to the sauce once drained. make the sauce a little too thick and add some boiling water if required.

I found that dried the spag a bit too much, even with low heat for maybe 30 secs, will try without extra heat next time.
I'm glad the OP posted this up, i've been wondering (not with much conviction obviously!) how to solve this for years!

You shouldn't need any extra heat.

Out of the pan, into the drainer, bit of a shake, back to the pan. Butter in, shake pan.
By the time the butter has melted, water will be gone.

The boiling water may be wrong, but adding the pasta to the sauce before serving is a tradtional way of doing it in many areas of Italy (note you need to undercook the pasta slightly when doing this).

Best dried on the vine, laid out in the warm Alpine sun.
