Posh restaurant in Brighton?

Hi people, I have a client going down to Brighton in a couple of weeks and has asked me to see if I can find him and his wife a nice restaurant for an evening meal. For info they're an American couple, in their 70s but very young for their age. They generally eat in and around Mayfair when they're in London in most of the top restaurants so the price isn't the foremost consideration. Any recommendations?

Old school and not bad at all, if not quite up there with the best in London.

I think Brighton isn’t anywhere as nice as Hove so I’d recommend Wild Flor.

Maybe a bit left field, but if they are young at heart I would happily recommend The Set - very good food and drinks flight, not necessarily "posh" enough for them perhaps:

The Salt Room lost it's way for a bit in my view but I understand they're back on form now:

And as above, if they're staying out Hove way and want proximity to that then Wild Flor is good.

I ate at Dilsk a few weeks ago and overall, it was very nice, but I wasn't blown away. I don't mind pasta al dente, but my tortellini was borderline undercooked.
