Sorry, search isnt working and I need a recipe for Duck ASAP. Not to fussed whether its breast or leg. Must be reasonably straight forward and not too expensive.

Doing a meal for 2 tomorrow night. Whats your fave recipe?!!!

Just roast it! put it in a very hot oven for 20 minutes then turn it down to about 180 for another 40 minuted give or take! use a rack over the roasting tin if you can! lovely crisp skin and moist meet!

If you're cooking breast, cook it like a steak in a griddle pan and serve rare.

Rick Stein has a really good recipe for cured duck breast, but I wouldn't really serve it as a main,

Just good the duck as recomended, usually pan fry for a couple of minutes then 20 mins in the oven, easy. Don't be scared to pull it out a bit early, rare is better than over done.

For a source, try a small amount of red wine with a decent chunk of morrelo cherry jam, heated up in a pan. Tastes awesome, very easy to do, impossible to fk up.

Main stay of my dishes to impress the ladys at uni, never failed. Still one I do for myself a fair bit too

tea smoke it. its a slight faff but is cheap to do and tastes utterly amazing.

take

1/8 teaspoon freshly ground black pepper
3/8 teaspoon fine sea salt
4 finely chopped spring onions, white and light green parts only
1/2 teaspoon ground cinnamon
1/8 teaspoon ground ginger
1 whole star anise

put the above in a plastic bag. score 2 duck breasts, add to bag, shake to cover and refrigerate overnight.


Preheat oven to 180°C.

line a wok [or roasting tin] with foil leaving a generous overhang along edges. put in 1 tbsp of green tea or darjeeling leaves then put in a wire rack so that the meat will rest above the bottom [when i did this, i fashioned one from a toastrack and tin foil].

heat a skillet until hot but not smoking. fry duck skin-side down without moving it for about 5 minutes.

transfer breasts, skin side up, to rack in wok. heat wok over high heat, uncovered, until a steady wisp of smoke appears. reduce heat then cover wok with a tin foil lid and roll/crimp the edges to form a seal. smoke for 10 minutes.


unwrap outdoors!!! then roast in oven for 10mins. rest before serving.

accompany as you see fit. a bed of plain noodles with stir fried veg and roast sweet potatoes + a fruit coulis works well.

Somehow the ingredients are missing for the sauce,

2 duck legs
1 Orange

150ml red wine
150ml chicken stock
2 tbsp redcurrent jelly
chopped parsley to serve

Very simple and easy, done for friends who loved it.
I sometimes rub th educk leg in a bit of 5 spice which also works well with the same sauce

I'd simply roast it on a rack, with any combination of roast potatoes, sweet potatoes, parsnips, onions underneath to catch the juices.

Pick out the veg, pour off the fat (save this), deglaze the roasting pan juices with a bit of stock, then add sour cream for a Northern European flavour.

Serve the duck with the roasted veg, plus red cabbage stewed in butter with apple, onion, raisins and a few cloves. Mmmmm.

Olive oil some diagonally sliced baguette, then start off in a hot griddle pan, before transferring to a hot oven to brown it off.

Duck pate on the toasted bread, topped off with flash cooked duck breast (still pink on the inside) on the toast/pate combo.
