Thanks to Rick Beato's "What Makes This Song Great" YT series, I've discovered a couple of tunes that start quietly then - out of nowhere - smash it out of the park.

Cheating as it's 2 tracks but when you listen to The Colour And The Shape by The Foo Fighters from the start and Doll runs into Monkey Wrench.

Some great tracks added already, and like the OP I also watch Rick Beato's YoutTube channel - he is ace.

the most obvious one (to me) is "Smells Like Teen Spirit" - it exploded overnight..

I have fond memories of hearing those tracks for the first time when they were released; each one felt like a game-changer.

This. Opening track on a debut album.

The first two minutes or so of noodling were meant to make the listener turn the volume up, then BOOM!!

Still love this, after all these years.

Perhaps not what you have got in mind, but this is by the Norwegian guitarist Knut Reiersrud and organist Iver Kleive.

You are tempted to turn the volume up at first, but watch out after the 2 minute mark!

This won't be everyone's cup of tea, but is the final tune on the album that doesn't kick off until the 3 minute mark, then again at 5:20 to finish the album on a 'blown away' note.
