My mate is a night owl and is currently binging Netflix.

Sent me a message this morning asking me to watch episode 10 skip to 53mins in & watch the remaining 10 or so minutes.

I love a good conspiracy theory and this just adds fuel to the fire for me. Is there a chance there could be some lunatics tweaking virus's to become more deadly & sending them back out into the wild or just complete coincidence they made this series & then this virus has a natural mutation and takes hold?

It's entirely scientifically possible, and it will get easier for non state actors, which is the biggest worry.
