Dog getting excited at cars advice

We have recently taken on a 16 month old deaf female French Bulldog, she is lovely in every way except she gets rather excited when she see's cars on her walk.
At the start of her walk she is fine; trotting along nicely next to me or just infront with little or no pulling however as soon as she see's a car she goes mental; pulling at the lead, barking and yelping in a really high pitched way almost like a scream, this sets her off and she is then hyper for the rest of the walk with a combination of her pulling when there are no cars about or constantly stopping to check out what is happening behind her; looking for cars I guess, it really makes the walk a bit of a painful excercise.
Any ideas on how this can be stamped out?

When a car is coming, you take her favourite treat and stop, make her sit facing away from traffic, and hold the treat in front of her face to distract her. Once this is easy then you sit her facing traffic. Once this is mastered then continue walking but holding the treat in her face.
She ONLY gets the treat when/if she fails to respond to the passing vehicle.

Well I had the first go this morning; so far so good, it is a bit awkward given her size and deafness as I have to stoop down to get her attention however she sat, using my sign "sit" command and I positioned my hand so she knew there was a bit of cheese on offer, a few times she glanced in the direction of the car but she didn't once even attempt to try and chase it and she was suitably rewarded when the car went past.
I'll carry on for a bit longer and see how things pan out.
