Cats, territory and pecking order

We have a 10 month old cat that's been going outside now for a good few months and he seems to have established our front garden as his territory. He tends to see the other 1 million cats off with the exception of two...
The 'big tabby' comes over some evenings to seemingly wind ours up by walking straight across the garden, one time hearing loads of noise to find our cat laid on his back with the other one standing over him. I've seen him do this and chase the other cats from the street numerous times so I assumed this is the 'dominant' cat in our neighbourhood, terrorising all the others. He doesn't tend to come near the door or wheelie bins (where ours sits) though.
The other is a persian type thing and lives directly next door. I think he's kept in over winter so hasn't been a problem but now it's lighter and warmer he's out all the time. The one mentioned above even steers clear of this one. He walks all over our front garden and chased our cat into the house and lounge earlier after a brief standoff. Would only leave when I got the squirty water bottle on him.
Is there a definite pecking order and why is the persian one so brave? And can I do something to get our cat to 'man-up' or does this come with age or something else?
I just don't want to be letting ours out all the time and he get chased back in or worst case end up actually fighting.
