If you do get stuck behind a cow/sheep on a country lane, I find the best thing is to hang back and not drive right behind them, as if you do that they just run in a straight line without thinking of moving to the side.

A bit like if you were being chased downhill by a large concrete ball that's right on your heels type of situation.
