Porsche actually make (well, outsource the manufacture of) child seats specifically for the back of the 911. I suspect that would be your best bet for making the most of the limited legroom available; they're not cheap but I guess in the grand scheme of the cost of buying and running a 911 I guess it's not too bad.

Having said that, if the seven year-old is over 125cm (I think), they can use a backless booster seat which you can pick up from Halfords for about £20.
ETA: Obviously that's assuming you intend to put both children in the back. If the seven year-old can go in the front with the five year-old behind them, that opens up considerably more options.
