GF has just bought a new car. She still had till september to run on her old cars insurance, but they wouldn't insure her new car so she couldn't swap the policies.

I've just found out that she's insured her new car claiming 2 years NCB... that's what she would have had in september. Obviously I've told her she can't claim a years NBC she hasn't got, and also claiming her 1 years NCB on two vehicles.

She's paid all of it up front, and not yet received the policy information through. What's the best way to proceed with this?

You have 2 weeks grace to cancel the policy.

If she cancels her original policy would she lose the original 1yr no claims? Or would she still be able to use that?

She'll still keep the one year she had built up.

Super, thankyou. Will she be able to re-get proof of it from her current insurer?

Yes, when she cancels her policy they should send it out as standard but it's always worth asking at point of call.
