Hanging a foot off the back of the car 2" off the ground you will lose that on the first speed bump you cross.

2" seems very low - the car will have some suspension travel even if v.stiff, which I suspect will drop the rear more than 2 inches. There's certainly a spot on a slip road near me that'd easily do that, at speed.

For context a Lotus Exige S2 is considered "low" with rear ride height set at c.120mm (rather than the 50mm you're considering). I reckon you'll be scraping it all over the place on drives, carpark entrances/exits, Eurotunnel (even on lower deck) etc.

Shirley it depends on the length of the overhang of the car? A long vehicle length after the rear axle is asking for trouble. May be less of an issue with a hatchback with a wheel very near the corners.

Beyond kerb drops, I can't think of any departures requiring angle.

You'll be fine if you only intend to drive it on perfectly flat roads. You wouldn't get out of most domestic driveways with it that low though and you certainly wont get over full-width speed bumps.

Looking at that picture, with it that far behind the rear axle I wouldn't go under six inches and even that will ground on some roads.

Even the tiniest undulation on the road is going to have that grounding. Attach something sacrificial to the back 2” off the ground and go for a drive. I don’t think it will be there when you get back.
