I don't care as long as the information is there and reliable.
The removal of things like temperature gauges and the like is what troubles me. Sadly, most drivers seem to ignore everything but the speedo.
The Boy has a Fiesta ST and sometimes the digital rev counter and speedo don't load their needles. Never had that in any of my cars though, thankfully.

Vauxhall's lovely 7 dial dash from the 1970s
My last Insignia had decent analogue dials, carrying on the tradition but integrating an electronic panel.
My current MX5
My 1985 Corvette C4. I loved this, at the time though the daft 85mph graphic speedo was supplemented by a digital numeric readout above that. Very space age at that time.

The whole point of a digital dash is to be able to customise displays. Without that I'd much rather have traditional.
Hi-Res Digital displays due to the abilty to switch between multiple displays depending on what you are doing.
Eg. Track focusing on revs, temps, braking feel etc. Touring focusing on speed, fuel consumption, weather etc.
Most digital displays allow you to modify what is being displayed so you can have the data that you find most important to you personally.

I like the setup in my focus ST, standard Speedo, rev counter, fuel and water temp front and centre. With a small screen giving the choice of additional display, I have digital Speedo most of the time but like that I can choose mpg, range etc instead.
The st also has gauges on top of dash centre for boost, oil pressure and oil temp
I find the latter 3 really useful, I never put my foot down until the oil is up to temp
I'm less worried about the display more the interaction and what's shown.
What I do like is a tactile interaction with the controls, temp and climate controls I can operate without looking because they are buttons or dials etc I don't want a massive, less good version of an iPad that I have look at to use
