Which car's instrument binnacle would you most like to sit looking at? My vote goes to the Ferrari 250 California:

Off the top of my head- I don't know. But the MINI is the one I like least, along with any other dashboard where the speedo is not in front of you.

Aston Martin has some decent panels but I still like this one.

If we're talking 'normal' cars then the pre-facelift Alfa 147/GT instrument panel is pretty good - I just can't seem to find a pic. The recessed speed/giri dials were great, SWMBO had no clue what speed I was doing evil

I really didn't like that one on Top Gear that looked like it came out of a Playstation, but I can't remember what car it was.

Something old with recessed dials in cowls. Most old Ferraris do the job for me. That Koenigsegg dash above looks horrifically difficult to read to me!
