Is there any way to receive email notifications when someone responds to a post I'm interested in?

You can recieve email notification when someone replys to your own topic (there's a little box at the bottom of the creating post page when you start the topic), but that's it I think

Thanks. But no way of adopting a post that you are replying to which someone else has started?
