Audi TT MK3 1.8 weekend project?

My wife purchased a super low mileage 1.8 TT from Audi 16 months ago, she's done less than 3000 miles and now wants a more practical motor. (2017 black edition in white)
The car has 20500 now, and part of me wants to keep it but make it slightly more exciting.
For the money it's worth on motorway (£14900), there really isn't much at this mileage that I could find better..
1. The engine is an ea888 gene, will remap to 230, but with an is20 much more.
2. Manual, my main motor is a caddy maxi dsg ( not great for short school runs being diesel).
3. Very cheap to insure, £180
4. Driving feel - the seating position is very low, which give the sense/ feel of driving more planted over say a polo GTi with the same engine.
My vision, some light weight 18"s, exhaust, and remap, maxton trim.
I know most will not even consider this hair dresser car, I was originally looking at a swift sport a couple of years ago to mod, but let's be honest, the Audi is massively better quality/ built.
I just don't want anything too complicated, I could get a golf R, but it's not speed, it's feel I'm after. Golf r has a lot more maintenance, and potential issues, this is a simple manual 1.8 turbo

It's just FWD , again, it's a pretty simple motor.
For my use case, it's never going on a track, it's a trip to local coffee shop / garden centre in style car , that hopefully sounds nice and could make a smile when join a A Road.
I'm trying to tell myself it's the right thing, only because I just don't see much else.

I had one and really liked it. I think the Mk3 is the least 'hairdresser' of the 3 and even more of in black edition trim.
Felt a lot quicker than it was with the low driving position and go-kart style setup inside. I'd have another one in a heartbeat (I may well do so when current lease ends!)

The car looks great. I’d keep it as it is and keep it classy rather than adding those boy racer bits to it. If insurance is cheap now will it be after adding those and a remap? Most major companies wouldn’t cover you after adding the slightest mod.
I sometimes get ‘hairdresser car’ about mine but it’s always from crossover drivers - those are the real hairdresser cars
