Fan didnt cut in

Saturday, sitting in some traffic after exiting a motorway, I noticed a small puff of steam from the bonnet as the traffic started moving. The water temp was 100. It was then that I realised that the fan wasnt on. The traffic was moving by that time, so I switched on the ac ( as I understood that the second fan comes on with that ), and with driving the last 5 miles of my journey, the temp hovered around 90, higher than it would usually sit. Outside the car, I could smell hot car and coolant.
When I arived home, I switched the ac off and let the engine idle, and the first fan cut in, smack on 92 as it was has done before this incident.
I let the engine cool and returned to check the water level which I found to be correct ( just sitting in the visible pipe ) Checked it 3 times since, and it is still correct. Driven it again, and fan is kicking in as per normal.
A friend recommended putting in an override switch, that I could use to kick the fans in early when I know I'm going to be sat in some traffic - I think this is a good idea. Any other ideas please?

Mine did similar last year.
The connectors to the fans were dirty. (The connectors that are about 1 or 2 foot from the fans
and can just be pulled apart as normal).
The guy at the garage gave them a good brush up and fine since.
You have to remove the whole bonnet to get to these obviously.

...or the fan relay could have 'dirty' contacts.
Not uncommon as this is the point of switching and the fans have a high startup current.
Just pull the relay out and remove the cover - the contacts are easily spottable (the big ones that move with the armature) and a few rubs with a diamond file or fine emery will clean them up.
