Themostat not clicking the fan on until 110c in traffic. In the meantime the powersteering gets variable?! Anyone else had this?
Drove it this morning on a run, temp got up to 90c but steering was fine, fluid level fine etc.
Where can I get one of the thermostats and the metal tube junction? And how much?

Get it checked on a laptop ASAP, the capillary temp gauges are known to over-read, but I certainly wouldn't let it get that high without being sure.

Is it lighter, heavier.... could be an airlock, oil thinning due to excessive temp.
My first thought with both your faults, is that the water pump, PAS pump and engine oil pump are are all driven by the same shaft, and woodruff keys have been known to shear.....a possibility?

It must be the heat, car has had a huge amount of stick recently in some sprints, a lot of shaking about on airfields etc..but driving fine today.
