I live in the French Alps and have changed car from last year's. I have a set of wheels fitted with snow tires which I would like to use again on the new car. I would would like to know if going from a 255/35/19 set up with the summer tires to 225/40/18 winters would create any problems. I've compared them side by side and there's not much of a difference in rolling radius, but it is there nonetheless. Also, I don't mind dropping a bit of width as 255s are a bit wide for running on snow, but is the drop to 225 too much? Any thoughts would be welcome.

The difference in diameter is neither here nor there. How much difference does a couple of MM wear make?

As long as the ET is okay, go for it.

I assume the wheel-bolt spacing is the same so the wheel will actually fit to the hub.

Then the next thing to check is that the smaller wheel will clear the brakes. If your new car has bigger brakes than the old one this could be a problem

There is the matter of wheel off-set and the same comment about brake clearance applies, but since you are fitting winter tyres I assume you are not going for high performance so I would not worry too much about the off-set. (I will probably be jumped on for saying that!)

Finally, I think you will be fine with the 225mm width. (In fact the change to a smaller wheel and narrower tyre may even improve the ride and feel of the car)
