Cannot help you on the MPG front, but I suspect it won't be vastly different to the V12 DB11 so probably circa 20mpg all said and done.
Maintenance wise:
5 years free servicing, but be warned the 6th year service is a brake fluid and coolant change so is a little bigger than others.
Tyres a mixed blessing if sticking with the AM Pirelli specific A7A ones, rather like the A6A ones the Vantage runs if your timing is off you can find yourself caught out by stock issues or paying through the nose for them. Some AM dealers do have big markups on them as well. You may find switching to Michelins may help matters, although strapping a Pilot Sport 4S to the Vantage front does something weird to it the shoulder of the tyre never sits right and it looks bloody odd.
If painted at Gaydon up until roughly 2021 it will say hand built/handcrafted in England, later cars change this to say Great Britain as anything exlucing special colours is now painted in the St Athan factory and shipped back to Gaydon for completion. You may find issues like mine (2019) car and found microblisters on, so earlier cars still seem to have some issues (and I know of a few other cars from a similar time that have suffered with microblisters now).
Other items - I know of a few screen issues which in a DB11 was about £6k to sort, the air vents can be problematic as well and some have broken in some cases with the usual results cost wise. Official line is a dash out job, but I have heard some techs managing to do it still in the car saving time and cost, but if doing it at an AM dealer chances are it will be the official book time, meaning tears.
I think the extended warranty last I heard on a DB11 V12 was just over £2k a year, whether the same applies to the DBS, not sure.

I have been considering a DBSS also, and talking to friends I believe the screen issue you refer to is leaking, and there have been some cases where ECU damage has occurred also, due to water ingress. had a DB11 V12 for 3 years and now a DBS, and would expect overall mpg is somewhere between 16 and 25, but never analysed it. You can drive in GT mode which shuts down half the cylinders and will improve mpg if just sat on a motorway for a long journey. Otherwise they come with 5 year servicing pack and never paid for anything over then replacement batteries for the tracker fob.
Had mine since December 2018. Indicated mpg starts in the high teens and ends up in the mid 20s on most trips. Driving Miss Daisy can get to this:

Only fault with the car other than problems discovered on delivery and caused by a dealership has been the light switch. Only discovered it was broken when the message popped up on my phone that the car had failed its MOT. To say I was surprised was an understatement, as I have never touched the switch. Fixed under extended warranty (although still waiting for the correct replacement) - the AM version is chromed, which apparently is the cause of the problem as the weight puts too much strain on the rest of the unit. Have heard of others that have done the same.

In regards to the headlight switch it is fundamentally screwed as there is only two tiny plastic pins the screws for the inner section go into. Eventually they snap and it releases the inner section.

It must have broken when it was tested at the MOT, as I have never touched it!There is a repair kit they should be using first. I suspected that might be the case, Sevenoaks told me pretty much the same if it was bright chrome good luck.
They are incredibly fragile for where they sit in terms of the dash. It *may* have been kicked at some point accidentally which is apparently one of the major reasons they fail (at least from the information I got from the Master tech that works for AM Paris).
All i know is the inner section came tumbling out from the main outer ring when acclerating off a roundabout, which was vaguely unsettling as it hit my knee and having no clue where it went.
