She didn't say no...

I've always liked bikes ever since scrambling round an orchard on a modified Honda C70. Never had one as an adult as all the family were dead against them. Well I'm 61 now and hankering after something. I broached the subject with the wife and, for the first time, she didn't say no. More make sure your life insurance is up to date. I will need to take the relevant tests before any of this too.
I've always been into offroad motorsport and fancy something like a Landrover Defender with 2 wheels. What are your opinions on a Royal Enfield Himalayan? Seems to fit the bill and they're pretty cheap. I get that they are not quick, but, for me, that's probably an advantage.
Anything else out there similar?

I'm a similar age although I've ridden bikes for over four decades.
Like you I've been looking at what used to be called trail bikes, that's now been upgraded to "adventure" bikes.
I looked at the Himalayan and was quite taken with it until I saw how much it weighed, 181kg/399lbs. That's a tad lardy AFAIC!
Anyway I've gone for the VOGE 300 rally, considerably lighter than the Himalayan and better off road credentials. I will be picking it up in a month.
If you do look at the VOGE, the original MCN review absolutely slates it.
Funnily enough all the issues MCN pointed out don't seem to be problems for anyone else.
I've been trying to find another bad review but it's proving very difficult.

As above, really good balanced reviews. Once you have a licence you can go down to his place in Devon and have a go all the available options.
He also pops up here occasionally!
I went for a Honda CRF250L for £2k, which I'm pretty sure will always be worth £2k.
The Voge is also a good option. I had a go at the ABR festival.
