Chimaera cutting out at junctions..
Discussion
Not an expert but I believe there are several reasons this can happen; it's a fairly common complaint. Not sure how it would relate to a replaced alternator directly but they could have upset something else of course whilst doing the work.
Have had this on mine on and off. It seems to come and go. I just got used to being able to brake and blip the throttle with the outside of my right foot when needed.
The stepper motor can be at fault but there are several other reasons. Can you still hear the stepper motor pulsing when you turn the Ignition off?
Base idle is one to check. This should be set with the air hose to the stepper pinched closed or closed off.
Do you have Rovergauge? You can see the ECU trying to control the idle speed via that. Think you can also send signals to the stepper motor to check it is responding correctly too.
The speed sensor also affects idle speed but I think it only increases the idle speed not reduces it.

Did it run ok before the alternator change?
I would check all hoses and electrical connections in the engine bay to see if something has been disturbed, pay attention to the coil connections and ht leads.
Hose to fuel pressure regulator is worth checking but don`t think this is your issue.
Aftermarket steppers can be junk so I would put the old one back on.
One other thing to check is the 100 amp fuse on the chassis under the car, they can crack so give intermittent non charging issues, just thinking about low voltage issues here but unlikely.
Worth replacing it anyway as part of your maintenance.
