You want a lower cell count than 'standard' to increase flow, but the balance is in achieving more flow whilst still having sufficient surface area to treat your exhaust to MoT standards, ie at both natural idle and, crucially, fast idle, which is where the reduced surface area will be noticed more.

I'm interested in this as well. I am sure I have seen a post on here or FB of someone doing similar, removing the existing cat and putting a sports one in, further down the line so reducing under bonnet temp (and getting to fit the art work that is the Clive F pipe) and still passing an MOT on emissions.
I fitted a 200 cell a couple of years ago. My car was turbo charged so no room for the main cat. It struggled with the MOT but wasn’t far off. But the car was mapped for turbo. So I don’t think it would be far off if you have a system which is mapped expecting a cat. Happy for an expert to jump in.
