Just a couple of questions,
1, the Jaguar badge on the grille is it separate or part of the grille?
2, the wood trim, wood or plastic?

If it's like my 2.7D, the round leaper (ETA, sorry, growler) at the top of the grille is separate (but hard to prize off without damaging)

The wood trim in mine is wood (madrona I believe) but the R might be different.

Interesting, reason for asking is that my XJ grille cat is always being pinched and I recently had a go in an 05 STR with "aluminium" trim only to find that it's plastic.

The wood is real (thin veneer) but the metal is fake.

The dash Metal:
The dash surround is metal not plastic
checked when I removed it to fix a vent clip

Have been onto Jaguar and it seems you are right. For obvious reasons the airbag part isn't, but the rest is.

And how did the test drive go? Was it fast enough and grippy??

Very fast, STR's can vary, but this one did seem quick. Did an unscientific 5 seconds from 70mph and it got 105, which seemed good.
