Can anyone tell me how to turn this up, currently at 500 rpm (just about!) in drive so stalls way to easily

If it's anything like the XJ40 then you clean the throttle body. There is an adjuster somewhere, can't recall where but I believe 90% of the time it's just a dirty throttle body.

I believe it's set by the idle air control valve (IACV). Renowned for getting mucky and sticking.

Be aware that if you take the throttle position sensor off and/or muck about with the IACV you might need someone with a Jaguar diagnostic computer to set it up again. You should be all right to take the assembly off and clean it though.
