although it seems like you're asking a simple question, it's actually really complex, how do you define sought after? the model most people want? the model most people want vs supply?
coupe vs convertible
the coupe is probably prettier but has the downside that you'll mainly be driving them on sunny days, when you'll wish you can the roadster, there is an argument then the couple is more useable due to the larger boot, but if you want to see out of the rear view mirror, this is really limited, the rear hatch opening can actually make it difficult to get large items in there and when you're away from the car people can see what's in your boot, where as the boot on the roadster is much more secure and not that much smaller and often easier to get things into
3.8 vs 4.2
in original form the 4.2 was the start of the move towards more of a gt car
The 4.2 has an all syncro gearbox, but reverse is in a stupid place with no lock out, so be careful changing down into 2nd. The moss box is noisier no syncro on 1st, but is meant to cause less drag
The 3.8 has bucket seats, the 4.2 more comfy, sofa style seats, you'd never look at them and go that's the seat of a sports car
The actual brakes are the same but the 4.2 has a more efficient servo so you get more assist, but because it's remote more lag
The 4.2 engine has more torque, the same hp but lower down the range, but is much less keen to rev, they tend to feel lazier
The real point is most e-types have been upgraded in one form or another, and this makes the original car less important, the most expensive e-types are those by eagle and jd classic and as they achieve thier sale price i guess you could argue they are the most desirable, these are cars with upgrades that fix the perceived weaknesses of the original cars

A very good accountAt the end of the day it's what you want, or what you want to be seen in, or an investment.
Like people ask why have I spent so much time/money on my XKR
It's how I want it and look at it as progressive development
Beauty is in the eye of the beholder, I've always felt the OTS to be much the better looking car.
The other advantage of the OTS is that it can be driven by taller people. I'm just 6' but sitting in an OTS I look over the windscreen. In a Series III FHC I have to drive with my head to oneside up in the sunroof well. In the non 2+2 FHC I'd have to take the seat out :-) Although I believe there are kits available to bolt the seat frame straight to the floor and use a very slim cushion.

I may have to run and hide saying this, but my favouite 'E' Type is the V12 convertible.
I agree with NormanD; my old XJ is worth very little in terms of resale value and far less than I spend on it, but value is not what I seek.
