Does anyone know why this might be adjustable up/down
I’ve just noticed the plate which the bracket that holds the outer cable is slotted

Is it just to get the best angle for the inner cable?

Had a look at a spare pedal box I have and yes it is slotted.
This is so you can adjust the resting position of the throttle pedal.

When you refit the throttle cable please make sure you set the cable adjustment so that with the pedal hard down to the stop you can still open the throttle mechanism a little wider by hand. If you don't you risk breaking the cable.

Now you’ve got me worried Steve

I haven’t seen anything for cable adjustment. The cable attaches to the plenum at a fixed position with a pin and to the bracket on the pedal box with a plastic/rubber end.
Other than the throttle stop - the nut and bolt on the bracket, there is no adjustment.
Or is that what you meant - just don’t set the throttle stop so stamping on the throttle stresses the cable?

At the plenum the cable inner has a clevis pin into the throttle lever. The outer is secured to the bracket with a threaded section and 2 very large nuts. These nuts are the adjustment. They both can move up and down the threaded section. Tightening them against each other and the bracket locks the adjustment.
