Afternoon chaps.

I've just replaced the sump gasket, oil and filter. Car is showing around 17psi at approx 900rpm, going as high as maybe 25psi at...say...3500.

What should I see on the gauge?

I've used around 5l of 10w/40 - maybe a smidge under, allowing for spillage. I can't check the level as the dipstick is broken/tube squashed. That's a job for when the outriggers are done.

Mine displays about 25psi at 900 rpm idle when warm and heads up towards 50 at 2500 rpm. I think oil capacity is 4.5 litres + 0.5 litre for filter.

Was your oil pressure different before the recent work?

The oil pressure sensors do not seem to last long and may be giving you an incorrect reading, they quite often start leaking before failing. I am not convinced that a Litre less oil would affect the oil pressure, but it does need topping up.

A garage should be able to check your true pressure (if incorrect)with a subsidary guage.
